One Bowl - One Pot Marinated Tomato Pasta

When you need something quick and easy and have a bounty of summer’s produce!

Dairy free - Vegan
Serves 4

  • 1 pound whole grain pasta

  • Approximately 3 cups fresh tomatoes, halved or quartered depending on size

  • Generous glug of good quality olive oil

  • Generous drizzle of white balsamic vinegar

  • One clove fresh garlic, grated on a microplane

  • One can cooked chickpeas

  • Big handful fresh basil

  1. Prep tomatoes to marinate by adding to a bowl with evoo, salt, pepper, garlic and white balsamic vinegar 

  2. Boil pasta according to package instructions, reserve 1 cup starchy pasta water

  3. Strain, add marinated tomatoes to hot pasta pot along with chickpeas if desired. Add pasta back in, add pasta water, stir to combine. 

  4. Replace lid and let sit for about five minutes, allowing flavors to meld. 

  5. Remove lid, season to taste with more evoo, vinegar, salt and pepper. Stir in herbs, serve.
