Za’atar-Spiced Tomato Concasse

A simple and light side salad or condiment for late summer meals featuring the stars of the season!

Gluten free - Grain free - Dairy free - Vegan
Use one small to medium tomato per person

5-8 small to medium tomatoes (or more for a larger crowd!)
1/4c olive oil (or more if desired!)
2 tsp za’atar spice blend
Flaky sea salt, like Maldon
Toasted sesame seeds, lemon zest, fresh herbs of choice, and more olive oil for serving. 

Serve with fresh bread, over rice or another grain of your choice. 

For the Concasse…

Step 1: Remove the stems from your tomatoes.

Step 2: Score an “x” on the bottom of each tomato.

Step 3: Place the tomatoes in a pot of boiling water for around 30 seconds until the skin begins to peel off.

Step 4: Remove from the water using a slotted spoon and place in ice cold water to halt the cooking process.

Step 5: Remove the skin. Quarter the tomatoes and remove all the seeds and the core.

For the dressing…

In a small saucepan, pour a generous glug of olive oil and add 2 tsp. za’atar spice blend. Over low heat, gently warm to infuse the flavors of the za’atar into the oil. The minute it becomes fragrant, turn off the heat.

To serve…

In a serving bowl, add the tomatoes and drizzle the oil over the top. Season with finishing salt and gently toss to coat the tomatoes in the oil. Garnish with toasted sesame seeds, lemon zest and fresh mint and another drizzle of olive oil. Serve room temperature with a loaf of crusty bread or try over rice.
