Tomatillo Salsa

This tangy green salsa is great with chips, on sandwiches, eggs, grain bowls, salads and more!

Makes about 1 cup

9 oz. tomatillos, husked and quartered

1 jalapeño, seeded and finely sliced

1/4 cup fresh cilantro leaves and tender items, coarsely chopped

1/4 cup EVOO

2 tbs chives, finely chopped

1 tsp cumin seeds, toasted and coarsely ground

Juice from one half of a lime

1 tsp salt

1 tbs pickled coriander seeds (optional)

  1. Pulse tomatillos in a food processor and then add the remaining ingredients and pulse just a few more times to incorporate everything into the salsa.
